This dish is the result of tasting a dish at Jean Georges’ Spice Market in NYC 5 years ago. After talking about the trip I had with my dad over there, I recalled this beautiful toasted coconut fried egg.
So here it is 👹
Recipe:
1 Cup Unsweetened Coconut Shavings
1 Cup Sliced Leeks
1/2 Cup Sliced Shallots
1 Cup Jasmine Rice
1/2 Cup Coconut Milk
3/4 Cup Water
pinch of salt (as much as you would normally add to your rice)
1 Tbs Sugar
1 Whole Egg
1/2 Tbs Nam Prik Pao
