煲仔飯豉油(一次性用途)
最簡單製作
材料:
蔥1條
芫荽1棵
乾蔥頭1粒
油2湯匙
生抽2湯匙
老抽半湯匙
糖1湯匙
清水3湯匙
處理:
1. 芫荽及蔥,清水洗乾淨。
2. 乾蔥頭,切兩端,去皮,清水洗乾淨。
3. 芫荽,1開3。
蔥,1開3,拍鬆根部。
乾蔥頭,1開2,拍鬆。
烹調:
1. 大火在鑊中燒熱油2湯匙。
2. 轉慢火,加入芫荽、蔥及乾蔥頭,轉大火爆香,再轉慢火,慢慢等它們出味。
3. 蔥已煎至金黃色,加入:
a. 清水3湯匙
b. 生抽2湯匙
c. 老抽半湯匙
繼續用中慢火煮約1分半鐘。
4. 轉最慢火,加入糖1湯匙,煮溶,試一試味,可酌量加入清水。
5. 過濾好豉油,倒入調味小碟子內。
6. 完成,可享用。
Cudtom made marinade for claypot rice (simple recipe, for one single use):
Ingredients:
Green onion 1 No.
Coriander 1 No
Shallots 1 No.
Oil 2 tbsp
Light soya sauce 2 tbsp
Dark soya sauce 0.5 tbsp
Sugar 1 tbsp
Water 3 tbsp
Preparation:
1. Coriander and green onion, rinse with tap water.
2. Shallots, cut both ends, get them peeled. Rinse with tap water.
3. Coriander, divide it into 3 shares.
Green onion, divide it into 3 shares. Beat its root well.
Shallots, divide it into 2 shares. Beat well.
Steps:
1. Heat up oil 2 tbsp at high flame in wok.
2. Turn to low flame. Add in coriander, green onion and shallots. Turn to high flame, fry well. Turn to low flame in order to help releasing the flavor of them.
3. Green onion has been fried into golden yellow, add in:
a. Water 3 tbsp
b. Light soya sauce 2 tbsp
c. Dark soya sauce 0.5 tbsp
Continue to cook at medium~low flame for 1.5 minutes.
4. Turn to low flame, add in sugar 1 tbsp. Cook until it is totally melted. Taste it. Add in appropriate amount of water if necessary.
5. Filter the marinade in a small plate.
6. Complete. Serve.
